Zesty Lemon Butter Fish Fillet
Serves: 4 • Prep: 10 minutes • Cook: 12 minutes • Total: about 22 minutes
Ingredients
For the fish
4 white fish fillets (cod, tilapia, haddock, halibut, or snapper), about 5–6 oz each
1 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
1/2 tsp garlic powder
2 tbsp olive oil
2 tbsp all-purpose flour, optional for a light crust
For the lemon butter sauce
4 tbsp unsalted butter
3 garlic cloves, minced
1/3 cup chicken broth, fish stock, or dry white wine
2 tbsp fresh lemon juice
1 tsp lemon zest
1 tsp honey, optional
1 tbsp chopped parsley
1/2 tsp dried thyme or 1 tsp fresh thyme leaves
Pinch red pepper flakes, optional
For serving
Lemon slices or wedges
Extra parsley
Instructions
1. Season the fish
Pat the fillets very dry with paper towels.
Season both sides with salt, pepper, paprika, and garlic powder.
If you want that extra golden edge like in the photo, lightly dust each fillet with flour and shake off the excess.
2. Sear the fish
Heat olive oil in a large skillet over medium-high heat.
Add the fillets and cook for 3–4 minutes on the first side until golden and lightly crisp.
Flip gently and cook another 2–3 minutes, until the fish is just opaque and flakes easily.
Transfer to a plate.
3. Make the lemon butter sauce
Lower the heat to medium.
Add butter to the same skillet.
Stir in garlic and cook for 20–30 seconds, just until fragrant.
Pour in broth, stock, or wine and scrape up the browned bits from the pan.
Stir in lemon juice, lemon zest, honey if using, thyme, red pepper flakes if using, and parsley.
Simmer for 1–2 minutes until the sauce turns glossy.
4. Finish
Return the fish to the pan for 30–60 seconds and spoon the sauce over the top.
Remove from heat and garnish with extra parsley and lemon slices.
Tips
Cod and halibut work especially well because they hold together nicely.
Don’t overcook the fish or it can dry out fast.
For a richer finish, swirl in 1 extra tablespoon of cold butter right at the end.
Want more brightness? Add a little extra lemon juice just before serving.
