@JekyllCapital @TwainsMustache @brolinwalters The problem is the E.Coli, Listeria, and some Clostridium live in the digestive tract of the animal. If the abattoir does a good job with their work, there is no contamination. If they nic the digestive tract, they can contaminate the outside of some of the muscles.
