Golden halloumi, juicy orange and crunchy carrot ribbons — 20 minutes is all this salad needs.
Ingredients:
• 2 large oranges
• 1½ tbsp wholegrain mustard
• 1½ tsp honey
• 1 tbsp white wine vinegar
• 3 tbsp rapeseed or olive oil, plus extra for frying
• 2 large carrots
• 225 g halloumi, sliced
• 100 g watercress or baby spinach
• Salt and black pepper
Cut the peel and pith from the oranges and segment them over a bowl so you catch the juice.
Add the mustard, honey, vinegar and olive oil to the orange juice. Season and whisk into a dressing.
Use a vegetable peeler to make long carrot ribbons and toss them gently through the dressing.
Heat a small drizzle of oil in a frying pan and cook the halloumi for a few minutes on each side until deeply golden.
Toss the watercress or spinach with the dressed carrots, divide between plates and top with the orange segments and warm halloumi.

Ingredients:
• 1.8 kg roasted chicken, at room temperature
• 2 romaine lettuce hearts
• 4 tomatoes
• 3 spring onions
• 2 ripe avocados
• 3 tbsp lemon juice, plus extra for the avocado
• 200 g feta
• ½ tsp dried oregano
• ½ tsp dried mint
• ½ bunch flat-leaf parsley
• 5 tbsp extra-virgin olive oil
• 2 tbsp Kalamata olives
• Salt and black pepper
• Pitta bread, optional
Pull the chicken meat from the bones and roughly shred it. Chop the romaine, cut the tomatoes into wedges and finely slice the spring onions.
Slice the avocados and squeeze over a little lemon juice. Crumble the feta and toss it with the oregano and mint.
Whisk 3 tbsp lemon juice with the olive oil and season with salt and black pepper.
Combine the chicken, lettuce, tomatoes and spring onions. Add most of the dressing, then gently fold through the avocado.
Finish with the feta, Kalamata olives, parsley and the remaining dressing.

• 1 Little Gem lettuce
• 1 ripe avocado
• 140 g cooked king prawns
• 1 small red onion, finely sliced
• Small bunch of coriander
• 2 tbsp sweet chilli dipping sauce
• Juice of ½ lime
• Black pepper
Cut away the peel and white pith from the oranges, then slice them into rounds.
Separate the lettuce leaves and arrange them between two plates.
Halve, stone and peel the avocado, then slice it and add it to the lettuce. Scatter over the king prawns, orange, red onion and coriander.
Mix the sweet chilli sauce with the lime juice and a little black pepper.
Spoon the dressing over the salad just before serving.

For the base:
• 250 g digestive biscuits
• 85 g butter, melted
For the filling:
• 900 g full-fat cream cheese
• 250 g golden caster sugar
• 3 tbsp plain flour
• Pinch of salt
• 1 tsp vanilla extract
• Finely grated zest of 1 lemon
• 1½ tsp lemon juice
• 3 large eggs + 1 egg yolk
• 200 ml soured cream
For the topping:
• 200 ml soured cream
• 1 tbsp golden caster sugar
• 2 tsp lemon juice
Heat the oven to 180°C / 350°F (160°C fan).
Crush the biscuits finely, mix with the melted butter and press firmly into the base of a lined springform tin. Bake for 10 minutes, then leave to cool slightly.
Beat the cream cheese until smooth. Add the sugar, flour and salt, then mix in the vanilla, lemon zest and juice. Beat in the eggs and yolk gradually, then mix in the soured cream on low speed.
Pour over the base and bake until the edges are set but the centre still has a gentle wobble. Turn off the oven and leave the cheesecake inside to cool slowly.
Mix the topping ingredients and spread over the cooled cheesecake. Refrigerate for at least 8 hours before slicing.

Ingredients:
• 1 kg pork
• 500 ml sparkling mineral water
• Salt, to taste
• Black pepper, to taste
• 1 tsp paprika
• 1 tsp shashlik seasoning
• Tomato juice, enough to coat the meat
For the marinated topping:
• Red onion
• Fresh tomato
• Fresh herbs
• Lemon juice
• Vegetable oil
• Salt and pepper
Place the whole piece of pork in a bowl, pour over the sparkling mineral water and leave for 1 hour.
Remove the meat, cut it into fairly thick pieces and season with salt, black pepper, paprika and shashlik seasoning. Add enough tomato juice to coat the meat well, mix thoroughly and leave to marinate for another 2 hours.
Arrange the pork on a parchment-lined baking tray and bake at 180°C / 350°F for 40–50 minutes, turning the pieces after about 20 minutes. Cook until the pork is browned and safely cooked through.
