1 - case to case basis depending on the scope of the cafe ... only rly applicable kung kaya mo magprovide ng nondairy options in the first place eg. actual oat milk recipes next to ur regular ones. otherwise mahirap ijustify bumili ng oatside para lang may pangsub ka
3 - the main target market of coffee are students and workers who need their coffee as early as 5 am. opening past 10 am and closing late nights limits ur market to coffee enthusiasts and nighttime motorists. nothing wrong w that kung yan gusto mo i guess
2 - specialty coffee doesnt need to lalo na kung di mo naman understand pano gumamit ng matcha. using cheap culinary grade is ok -- same way na hindi ka naman oorder ng kape sa matcha tokyo bat ka mag mamatcha sa kapehan
@yzutwt the thing w the milk pricing is if ure using cheap reg milk tas paminsan lang ang may nagssub then the occasional cost difference wouldnt matter in the long run. one oomf pointed out creating specific nondairy lattes/drinks instead and i think its a good middle ground
