Here’s my 1.0 draft of the Mapo Paneer recipe shopping list. Highly recommend reading Kenji’s recipe for inspo.

Shopping List (Serves 8)

Proteins
•Paneer, 2 lbs (900g)
•Ground pork, 80/20, 1 lb (450g)

Sichuan vibes
•Pixian doubanjiang, 6 tbsp (1 jar)
•Douchi (fermented black beans), 2 tbsp
•Whole red Sichuan peppercorns, 3 tbsp
•Chinkiang black vinegar, 1 tsp
•Shaoxing wine, 2 tbsp
•Light soy sauce, 2 tbsp
•Dark soy sauce, 1 tsp

Asian Mirepoix (Aromatics)
•Garlic, 12 cloves (1 large head)
•Fresh ginger, 3-inch knob (about 30g)
•Scallions, 8 stalks (1 bunch)
•Leek, 1 medium

Supporting Cast
•Chicken stock, 3 cups (720ml)
•Cornstarch, 3 tbsp
•Avocado oil, 1/3 cup (80ml)
•Chili crisp (boomsauce) 2 tbsp
•Toasted sesame oil, 1 tsp
•MSG, 1/2 tsp (optional)
•Sugar, 1 pinch (~1/4 tsp)
•Jasmine rice, 4 cups dry (800g)
•Roti or naan (Call an Aunty)
•Cilantro (1 small bunch (for garnish)

No more ‘Tinku’, ‘Chhotu’, ‘Bablu’ or ‘Shaitaan’…. Rajasthan government launches scheme - Sarthak Naam Abhiyaan- to CORRECT ‘ inappropriate’ names. Only the Indian bureaucracy could draw up such a govt scheme of 3000 acceptable names. Acceptable names include ‘Akbar’, ‘Birbal’, ‘Vrindavan’. Amazing report in @htTweets today. By the way, Major Shaitan Singh, Paramveer Chakra winner and hero of Rezang La would have had to change his name if this scheme had been in existence then…..
