Blueberry Lemon Crumble Bars 🫐🍋
"Sweet, tangy, and irresistibly crumbly; blueberry lemon bliss"
Makes: 12 bars
Ingredients
For the crust:
1½ cups all-purpose flour
½ cup granulated sugar
½ tsp baking powder
¼ tsp salt
½ cup unsalted butter, melted
1 tsp vanilla extract
For the creamy lemon layer:
8 oz (225 g) cream cheese, softened
⅓ cup sugar
1 large egg
2 tbsp fresh lemon juice
1 tbsp lemon zest
1 tsp vanilla extract
For the blueberry filling:
1½ cups fresh blueberries
2 tbsp sugar
1 tbsp cornstarch
1 tbsp lemon juice
For the crumble topping:
¾ cup all-purpose flour
½ cup rolled oats
⅓ cup brown sugar
½ tsp cinnamon
¼ tsp salt
5 tbsp cold butter, cubed
Method
Prepare:
Heat oven to 175°C/350°F. Line an 8-inch square pan with parchment.
Make the crust:
Mix flour, sugar, baking powder and salt. Stir in melted butter and vanilla until crumbly. Press about two-thirds into the pan. Bake for 10 minutes.
Make the cream layer:
Beat cream cheese, sugar, egg, lemon juice, zest and vanilla until smooth.
Prepare the berries:
Toss blueberries with sugar, cornstarch and lemon juice.
Spread the lemon cream over the warm crust, then spoon the blueberries evenly over it.
Make the crumble:
Rub butter into flour, oats, brown sugar, cinnamon and salt until chunky crumbs form. Sprinkle generously over the blueberries.
Bake for 30–35 minutes, until golden and set around the edges.
Cool completely, then chill for at least 1 hour before slicing.
Finishing touch:
Dust lightly with powdered sugar and garnish with fresh blueberries and curls of lemon zest..🫐🍋
