This technique, inspired by classic Portuguese methods, allows winemakers to preserve structure and balance while enhancing richness—a hallmark of great Cape Vintage wines. As the months cool, these wines begin their journey of slow ageing, developing into some of South Africa’s most sought-after fortified wines.
