Pizza Tortellini Skillet
Ingredients:
- 1 lb ground beef
- 19 oz frozen cheese tortellini
- 24 oz jar marinara sauce
- 4 oz cream cheese (½ block)
- 1 tablespoon minced garlic
- ⅓ cup mini pepperoni (plus extra for topping)
- 1 cup shredded mozzarella cheese
- ½ cup shredded cheddar cheese
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
Instructions:
1. Brown the Beef: In a large oven-safe skillet over medium-high heat, brown the ground beef, breaking it up as it cooks. Season with salt, pepper, onion powder, and Italian seasoning while the meat is cooking.
2. Add Pepperoni: Add about ⅓ cup of mini pepperoni to the skillet with the beef. Let them cook together for 2-3 minutes until the pepperoni starts to get crispy and releases its oils for extra flavor.
3. Drain and Add Aromatics: Drain any excess grease from the pan, then add the minced garlic. Cook for 30 seconds until fragrant, being careful not to let the garlic burn.
4. Create Creamy Sauce: Add the marinara sauce and cream cheese to the skillet. Stir well, breaking up the cream cheese and mixing it in completely until you have a smooth, creamy sauce.
5. Cook the Tortellini: Add the frozen tortellini directly to the skillet and stir to coat with the sauce. Cover and cook on medium-low heat for about 5 minutes, or until the tortellini are heated through and tender.
6. Add Cheese and Finish: Top with the shredded mozzarella and cheddar cheese, plus extra pepperoni. Either broil in the oven for 2-3 minutes until bubbly, or cover and let sit on low heat until the cheese melts completely. Serve hot.
