Prepping for autumn with sunshine soup. 5 ltrs of butternut squash and red peppers with carrot, onions, red Lentils and mixed herbs stock. Deep freeze essential in my house for the lurgy season!

Friday night batch cook prep (not including bananas π) and Saturday morning cook resulting in a very delicious roasted butternut squash, red pepper, carrot, onion, ginger and honey soup with added red lentils. Lunch sorted π
This mornings breakfast - baked pancake (also known as Dutch baby or German pancake). My 3 year old thought we were having Yorkshire pudding for breakfast! Very tasty with maple syrup blueberries and thick yogurt π π₯ π«

And not many of the no bake / fridge cake chocolate oat bars that I made yesterday left either. Dark chocolate, peanut butter, coconut oil, maple syrup, oats, puffed rice cereal, raisins, pumpkin seeds and nuts - it's a health food π
A tray of my version of granola fresh out of the oven ready for when the festive over indulgence ends..... if i don't eat it it all now! It's so good with cold fresh milk, almond milk, thick yogurt, ice cream or even in handfuls with a glass of prosecco (other drinks apply too!).
