Your vegan oat-and-almond latte killed more bees, drained more groundwater, and required more long-haul lorry mileage than a year's worth of dairy milk from a Welsh cow that drank rain. You will not have heard about this, because the carton has "plant-based" on it in nice green lettering.
California's Central Valley produces 80% of the world's almonds. Every almond on every supermarket shelf, in every flapjack, blended into every oat-and-almond latte from London to Berlin, started life in one valley in central California.
A gallon of almond milk requires around 162 gallons of irrigation water. A gallon of British dairy milk uses around 8 gallons of tap water, and the rest comes from rain falling on grass that grows nothing else of nutritional value to humans. The cow drinks the rain. The almond tree drinks the aquifer.
California almonds consume approximately 1.1 trillion gallons of irrigation water annually. Roughly the same volume of water used by Los Angeles and San Francisco combined. Around two-thirds of the crop is then exported to Asia and Europe. A state in repeated drought emergencies, where over a million residents lack reliable access to clean drinking water, is locking its aquifer inside almonds and shipping it overseas in containers.
Almond trees bloom for three weeks in February. To pollinate 1.5 million acres of orchards in that window, California requires roughly two-thirds of every commercial honeybee in the United States to be physically transported into the Central Valley on flatbed lorries. The largest managed pollination event on earth, every year, conducted on the back of a truck.
The bees are released into groves sprayed with neonicotinoids, which scramble their navigation. Fungicides, which weaken their immune systems. Herbicides, which have already killed the wildflowers they would normally forage on between blooms.
Between June 2024 and March 2025, US commercial beekeepers lost 62% of their colonies. 1.6 million colonies dead. The largest honeybee die-off ever recorded in American history. The trigger period for the worst losses was the months immediately surrounding the almond bloom.
Meanwhile, beneath the orchards, the ground itself is sinking. The US Geological Survey has documented parts of the San Joaquin Valley that have subsided by up to 30 feet since groundwater pumping began in the 1920s. The valley lost as much elevation between 2006 and 2022 as it lost in the previous forty-five years. The Friant-Kern Canal has lost 60% of its flow capacity because the land beneath it sank faster than the canal could be redesigned.
Once those clay aquifer layers compact, the storage is permanently lost. The aquifer is being run as a one-way withdrawal, and California has been told this in formal hydrological reports for decades.
The land was never meant to grow almonds. The bees were never meant to live on flatbed trucks. The aquifer was never meant to be a tap.
But the carton says "plant-based" in nice green lettering.
So, presumably, you are saving the planet.

She had watched a documentary on Wednesday night about the meat industry. She had posted about it. Thirty-one people had agreed with her in the comments. She felt the momentum.
7:05am - Moisturiser. Contains squalane. Squalane is increasingly derived from sugarcane, yes. It used to be derived primarily from shark liver oil, and some supply chains still are. Chloe has not checked which one. The jar does not specify. The jar says "clean beauty." Chloe moves on.
8:00am - Porridge with oat milk, chia seeds, and a scoop of vegan protein. The chia seeds were grown in Paraguay. The land use change associated with chia's rise from niche health food to global commodity has been documented since approximately 2014. Chloe discovered chia in 2019. Chloe is not responsible for what happened before she arrived.
10:00am - Chloe took her supplements. B12, vitamin D, algae-derived omega-3, zinc, iron. Five separate products, five separate supply chains, five separate items of packaging. Chloe feels she is meeting her nutritional needs. She is doing so with the logistical complexity of a small pharmaceutical operation. This is fine. This is just what it takes.
12:30pm - Lunch: lentil soup, sourdough, hummus. The chickpeas came from Turkey. The olive oil from Spain. The tahini from Ethiopia. Chloe's lunch required four countries of origin and did not contain anything that once breathed. Chloe found this morally straightforward.
2:00pm - Scrolled through a thread about regenerative agriculture. Read the first two paragraphs. Concluded it was probably just greenwashing for the meat industry. Did not finish the thread. Posted a response anyway. Got fourteen likes.
4:30pm - Gym. Pre-workout: more pea protein, more oat milk, a banana. Post-workout: Chloe noticed she wasn't recovering as well as she used to. She googled this. The results mentioned creatine. The results mentioned leucine. The results mentioned that plant protein requires roughly 20-40% more volume to achieve equivalent muscle protein synthesis to animal protein due to differences in leucine threshold and digestibility. Chloe closed the tab. Opened a different tab. Bought a new protein powder. This one had a picture of a mountain on it.
7:00pm - Dinner: sweet potato and black bean tacos with cashew sour cream. The cashews were processed in Vietnam. Cashew processing workers frequently sustain chemical burns from cashew shell liquid, which is caustic. The industry in Vietnam and India has a well-documented occupational health record. Chloe had read about this once, in 2021, and had felt briefly troubled. She had since decided that the issue was really about fair trade certification and that her cashews were probably from a better source. She did not know this for certain. The packet said "ethically sourced." The packet did not define this.
9:00pm - Posted a photo of the tacos. Caption: "Easy, delicious, cruelty-free."
Chloe is, by every measure she applies to herself, a good person.
She is also, by several measures she has not yet applied, a person who outsources harm at enormous geographic distance and calls the distance ethics.
This is not unique to vegans. It is the defining condition of modern consumer life.
Chloe just does it with a cleaner conscience than most.
Chloe woke up at 6:45am and immediately felt proud of herself.
She had, after all, not eaten a single animal product in four years. The planet was healing. She could feel it.
6:52am - Applied her morning SPF. The SPF contains beeswax. Chloe does not know this. Moving on.
7:10am - Breakfast: a smoothie containing avocado. The avocado was grown in Michoacán, Mexico, on land where a pine forest was until 2019. It required approximately 320 litres of water to produce. It was flown to the UK. Chloe sprinkled hemp seeds on top. The hemp seeds came from China. Chloe felt connected to the earth.
8:00am - Got dressed. Polyester leggings, derived from crude oil. A bamboo top that was processed using carbon disulphide in a Taiwanese chemical plant. Trainers with a recycled plastic upper that sheds microplastics into waterways with every wash. Chloe's outfit today had a higher carbon footprint than a ribeye steak. Chloe does not know this either.
9:30am - Posted on Instagram about choosing compassion. The phone was manufactured in a Shenzhen factory using cobalt from the DRC, where mining operations have displaced local communities and killed an unknowable number of small mammals, reptiles, and insects. The algorithm served Chloe an ad for oat milk. Chloe liked it.
12:00pm - Lunch: tofu stir-fry. The soy was grown in Brazil. Brazil produces more soy than almost any country on earth. The primary reason is soybean oil: one of the most widely used industrial and culinary oils on the planet. The soymeal left over after oil extraction is fed to livestock as a byproduct. Chloe is aware of the livestock connection and finds it outrageous. She has not looked into why the soy was grown in the first place. The answer is the oil. The oil is in her salad dressing.
1:30pm - Drove to the garden centre. The car runs on petrol. Chloe has a Just Stop Oil sticker on the bumper. This is not being commented on further.
3:00pm - Bought a monstera. The monstera was grown in a Dutch greenhouse using natural gas heating. Chloe put it next to the pothos that is slowly poisoning the neighbourhood cats.
6:00pm - Dinner: pasta with cashew cream sauce. The cashews were processed in Vietnam, often by workers in conditions that would prompt significant commentary if they were in an abattoir.
8:00pm - Watched a documentary about factory farming. Wept. Posted about it. Caption: "We have to do better."
