Every spring in the Swiss Alps 50,000 people buy a ticket to watch dairy cows settle an argument, and the cows do not know they are being watched.

The breed is the Hérens, from the Val d'Hérens in the Valais, a small, dense, near-black cow that has spent a few thousand years going up a mountain every June and coming down every September and has, in the course of it, developed the strongest opinions about rank of any animal in Europe.

Because a herd on an alpine pasture needs a leader. Not a bull, there are no bulls up there. A cow. So on the first day of the summer grazing, the inalpe, when the herds from the valley farms are mixed on the high meadow for the first time, every Hérens cow has to know exactly where she stands relative to every other Hérens cow, and there is only one way to find out.

They fight.

Not the way you are picturing. Head to head, forehead to forehead, horns locked, and push. No goring. No blood. No man in the ring with a cape. Two 600-kilo dairy cows leaning into each other on a slope until one of them decides the question is settled, turns and walks away, and grazes. That is the whole bout. It can take 40 minutes. It can take 4 seconds. Sometimes the two of them look at each other and both decline, which is also an answer.

By the end of the first day the herd has a complete ranking, every cow knowing exactly who is above her and who is below, and the cow at the top is the reine, the queen, who leads them to the water and the grazing and the shade all summer and comes down in September as Queen of the Alp. Her farmer will be insufferable about it until Christmas.

Somewhere in the 1920s the farmers of the Valais realised the cows were going to do this anyway and started selling tickets. Regional bouts in spring. A national final at Aproz in May, six weight classes, thousands in the stands, the animals walking in with bells on, and a radio station in the valley with a weekly programme about it. The winner is the Reine des Reines, the queen of queens, and her price goes up the way a footballer's does. Over the border in the Aosta valley they have been doing it since at least 1858.

Nobody trains them. You cannot. A Hérens cow either wants the top of the hierarchy or she does not, and the ones that do will fight the same cow again every morning of the summer to check the result still stands. The farmers just noticed, and built a calendar round the noticing.

So there is a valley in Europe where the cow decides the social order, the humans keep the score, the loser walks off and eats, and 50,000 people turn up to watch a democracy of one settle itself without a vote.

She milks in the morning.

She fights at noon.

She is back on the pasture by two.

Nobody up there has ever called her simple.
