Coins are just something we assign a value to. They're not necessary. If a chicken is worth three drans and an amphora of wine is ten, you just swap three chickens for one amphora.

Obtaining the wine, that was easy. The pages of the Book of Laws pertaining to the feeding of kings say a barrel of wine has to be used the day it is opened. They might claim it's to prevent poisoning, but I suspect the influence of an opportunistic vintner.
