Let's talk about what modern cattle farming at its best actually looks like, because the discourse has been almost entirely captured by its worst.
Take a well-run regenerative grass operation in the British uplands. The cattle are a native or traditional breed suited to the landscape: possibly Galloways or Herefords or Highlands. They are rotationally grazed across permanent pasture, moved before they graze any section below a threshold that would prevent recovery.
The rest periods between grazing cycles allow the grass to regrow fully. Deep root systems persist. Carbon is sequestered at depth. Water infiltrates rather than running off. In drought conditions, the deep-rooted pasture holds moisture far longer than arable land.
The cattle's dung, deposited naturally, feeds a cascade of invertebrate life. Dung beetles bury it, aerating the soil and preventing surface capping. Earthworm populations thrive. The soil microbiome, billions of organisms per teaspoon, is rich, active, productive. Soil organic matter accumulates year on year.
Ground-nesting birds: lapwing, curlew, golden plover, nest in the grazed sward because the short, varied grass is the specific habitat they evolved to breed in. Wildflowers colonise the ungrazed margins. Insects thrive.
The farmer does not apply synthetic fertiliser because the manure does its job. The farmer does not apply pesticide because the pasture ecosystem is balanced. The input cost is low. The output is exceptional meat, exceptional ecological value, and exceptional long-term land productivity.
This is not an idealised picture. It is a real description of farms that operate this way across Britain and globally.
This is also invisible in the debate, which is conducted largely by people whose frame of reference is satellite images of cleared Amazon and footage of feedlot pens.
Both exist.
Only one is being used to indict the animal.
