4 years ago we opened our first café in Madrid.
Today we run 5 locations under the same brand: Casa Neutrale.
Here are 8 lessons we'd pay to have known at location 11.
The invisible layers of hospitality:
1. What you see (beautiful design)
2. What you feel (calm, care, attention)
3. What you remember (the emotion that stays)
Building the third layer is the hardest and the most valuable.
also becoming a nocco fan. especially on days with training, sauna, heat or just when i feel a bit flat. electrolytes are one of those boring things that actually matter.
i do 1 ginger shot a day for a few weeks every now and then.
it’s one of those small rituals that actually feels useful.

living in spain makes it obvious that restaurants are not just places to eat.
they shape the rhythm of the day. coffee, lunch, terrace, dinner, one more drink.
the product is food.
the value is the social architecture around it.
