@DaniNierenberg Birds help propagate native hot chili peppers, bananas pop up on their own, wild butterfly pea flowers flourish all year long, & clans of monkeys swing freely branch to branch on our permaculture farms in Southern Thailand. Diversity in crops allows this to happen.

And time it did take for this project to come into fruition. When we came in 2019 right before the pandemic hit & completed transformation of the family #farm into a sustainable #permaculture one, who knew we were planting the seeds of the AMATA COMMUNITY WET MILL project.
Mature with lots of white crispy flesh, this 🥥 is ready for grating into a fine meal and squeezed into fresh coconut milk... or a healthy snack on its own. Prying the meaty white flesh out of the shell is half the fun!

Takes some serious skills to chop a hard nut into perfect halves w/ a machete. Tht would be our very own Papa Duke who spends most days planting, maintaining, foraging & bringing home beauties like this.Bravo!👏🏼

A Durian Seedling
Hard to imagine a lil’ tyke like ths growing to 150ft (45m). Not the easiest🌱 to grow. Be patient & expect to replace a couple of times b4 taking root. But when it actually does & begins bearing #fruit fr 4-6 years on, it's like gift giving at Xmas. #farming
(substituted w/ our kumquats) 4 the dish 2B complete.
Too lazy to cut into brownie size squares. Not pretty but oh well. It goes into the same place in the belly anyway & still getting a good dose of vits B C fiber cholesterol-lowering sitosterol & tannins 3/3 #foodismedicine
Hunger overtook creativity when it came to cooking #farm fresh harvested CLIMBINE WATTLE. Tht & maybe a bit of laziness. Opted for a simple omelette. Beat a few🥚🥚smidgen of salt & fish sauce into a froth. Add tender CW shoots & mix well B4 pouring into med-heated pan... 1/3
until well set on both sides.
#Cooking will remove some of the pungency. And while the CW omelette by itself is tasty for a kiddy palate we grown-ups require one of #thaifood’s quintessential chili dipping sauce "nam prik kapi" made fr🍤 paste🌶🧄palm sugar & lime juice 2/3
