Potassium bromate makes dough stronger and rise higher. It's been banned in the EU and UK since 1990, Canada since 1994, China since 2005, and more than two dozen countries in total. It's still legal here because it was already in common use before the 1958 law that bars additives shown to cause cancer in animals, so it got grandfathered in. FDA asked bakers to stop using it voluntarily in 1991 and never banned it.
What's changed is where it still is. The American Bakers Association pledged in January to have it out of US baked goods by the end of this year and said an overwhelming majority of its members already don't use it. Potassium bromate is still in a variety of large, bagged flour, think 50LB commercial bags. In July 2026, Florida AG, James Uthmeier, subpoenaed a large manufacturer seeking more information on where in the food system it still exists and to ensure it does not reach K-12 schools. We will have to follow the courts to see where this goes but a good rule of thumb is to always check the ingredient statement!

• the antibacterial mechanism does not destroy beneficial gut bacteria at normal supplemental doses because the beneficial strains have naturally thicker cell walls. the selective toxicity is built into the chemistry
the pharmaceutical industry generates $46 billion annually from antibiotics. a $12 bottle of oregano oil matching or exceeding multiple prescription antibiotics in laboratory and clinical settings is an existential threat to that revenue. the research exists. the FDA classification prevents health claims. the gap between what the science shows and what the label is allowed to say is where the profit is protected
