What's the difference between Extra Virgin (EVOO) and Olive Oil? A properly produced EVOO is extracted with mechanical methods and contains healthy olives. Olive oil (NOT EV), on the other hand, is refined or defective, oil mixed with a portion of virgin or extra virgin.
