The cure for that is to pour the curdled mayo into a pitcher, start over with the original ingredients, then slowly add in the curdled liquid. Doesn't happen much.

1 egg
1/4 c. Corn oil.
2 T lemon
1/2 t. Salt
A dash of red pepper.
Blend for 10 seconds, then slowly add 3/4 c. Oil.
