@KatNoggin If you have a smartphone, it could be worth installing Google Live Transcribe. If you find yourself struggling to communicate because someone would normally read your lips, hold your phone up to your face, and what you say will appear as text on the phone screen. Not ideal but ..

@KatNoggin I would think so - they are fairly common varieties. They will probably just be labelled something like 'red potatoes', but in small letters, they will say the exact variety.

@KatNoggin And after you have heated up the roasting pan and fat, don't put it on a cold surface while you put the potatoes in - it will cool down too quickly, then the spuds absorb fat rather than developing the crispy outside you want.

@KatNoggin Make sure the fat (goose or duck fat tastes best, olive oil works equally well for a crispy potato though) is really hot before you put the potatoes in. I cook them at 240C, for about 40 minutes. Turn and baste halfway through.
