Chicken Avocado Melt Sandwich
Ingredients
2 chicken breasts, cooked and sliced
4 slices sourdough or thick sandwich bread
1 avocado, mashed
1 cup cheddar cheese, shredded
1/2 cup mozzarella cheese, shredded
1 small tomato, diced
1/4 cup red onion, finely diced
2 tablespoons mayonnaise
1 tablespoon butter
1 teaspoon garlic powder
Salt and black pepper, to taste
Fresh parsley, for garnish
Instructions
In a bowl, mash avocado with a pinch of salt and pepper.
Mix diced tomato and red onion together.
Spread mayonnaise on one side of each bread slice.
Layer chicken, cheddar cheese, mozzarella, avocado mixture, and tomato-onion mix onto two slices of bread.
Top with remaining bread slices.
Melt butter in a skillet over medium heat. Sprinkle in garlic powder.
Grill sandwiches for 3–4 minutes per side until golden brown and crispy, and cheese is melted.
Slice in half and garnish with parsley if desired.
