Udaan Café was first inaugurated in December 2024 by Civil Aviation Minister @RamMNK at Kolkata Airport.
It offers tea, coffee, a water bottle, one snack and one sweet dish at affordable prices.
New age leaders like Raghav Chadha should not be doing this. But then, what else can one expect from someone who learned politics from Kejriwal.
So there is a milk e-lafda going around. Bringing some doodh ka dhulai here:
1. There is panic being created over coliform bacteria by saying it's from 💩, where is it coming from?
Not human poop - cow dung. Cows in India are covered with dung almost all the time and since they sit on the ground, dung splatters etc etc, they usually have dung on their udders too.
If you have ever seen someone milking a cow - you will see they splash water on the udder before milking. This is for a superficial wash.
In India 99.9% cattle are milked by hand and the hands of those milking are almost always wet. Also washing of milking buckets is rudimentary. Coliform bacteria will be present in fresh milk - in mega quantity.

2. Is coliform bacteria bad and what is done about it?

Heat treatment - there are two main methods.
a) Basic stabilization via pasteurisation - this is a method that is used for rapid processing of large volumes of milk that is expected to be consumed fast - after boiling again. This treatment is principally to stabilize the milk for transport by simple cold chain between +2to5C - this method is not intended to sterilize the milk. Milk is heated to between +72-74C just before the protein begins to change from heat - hence the 'slightly raw feel'. The milk is held for less than 15 seconds at that temperature and rapidly cooled to fill in non-sterile polythene packets. This milk has to be refrigerated till use and shelf life is barely 24 hrs. Why is the shelf life low? Because this treatment is not enough to kill all bacteria and yeast. Some will survive and rapidly reproduce when the milk warms even slightly. The bacteria & yeast levels in this milk will fluctuate higher if two things happen - the milk heating time is less and if cold chain is not maintained. This milk must be boiled to above +85C before use to kill any remaining microorganisms. Also it has a built in safety valve - if it spoils it will curdle immediately on even slight heating. So never ever drink this milk raw from a packet even though it's fun, tasty (and I continue to do it sometimes cos it's fun 🤪).
b) UHT (ultra high temperature) treatment - In this process milk is heat treated to a much higher temperature - even higher than boiling at home - +135C. It's completely sterile and packed in sterile tetrapaks or multilayer bags. This milk has a very long shelf life and can be had straight off the packet.
3. So this outrage over some test results should be taken seriously?
For general knowledge yes. But boil the milk and use - you will be completely fine.
Footnote: There is a lobby that is actively funding anti-dairy public agenda to promote plant/nut based 'milk'. I will not name this lobby for legal reasons. But be aware.
