A surprising revelation from a middle school science fair project revealed that ice at fast-food restaurants can harbor more bacteria than toilet water from the same locations.

12-year-old Jasmine Roberts from Tampa, Florida, conducted her award-winning experiment to examine hygiene in fast-food settings. Inspired by reports of bacterial contamination in airline ice, she collected ice samples from five local fast-food restaurants—including from self-serve machines, counter dispensers, and drive-thru windows. She then gathered toilet water samples from the same establishments for comparison.

Roberts tested the samples at the University of South Florida microbiology lab. The results were striking: in 70% of the cases, the ice contained higher levels of bacteria than the toilet water. Several ice samples even tested positive for E. coli and other fecal coliform bacteria, indicators often linked to human waste or poor sanitation.

Experts explained the counterintuitive finding by noting that restaurant toilets are flushed frequently with treated municipal water and cleaned regularly, which helps keep bacterial counts low. In contrast, ice machines are frequently overlooked in routine cleaning. Over time, biofilm (slimy bacterial layers), mold, and contaminants can build up inside the machines, on scoops, or in dispensing areas—especially if employees handle ice with unwashed hands or fail to sanitize equipment properly.

Although the bacterial levels detected did not necessarily indicate an immediate high risk of illness for most people, the project highlighted a significant hygiene gap in the food service industry. Roberts' work earned her first place in her regional science fair and drew widespread media attention, including appearances on shows like Oprah. It also served as a wake-up call, prompting some chains and regulators to increase scrutiny and maintenance of ice-handling equipment.
