After 18 months of sheer madness, the moment has arrived!
These last 18 months have been a journey of learning, and, more importantly, one of unlearning.
While our course is set, and we know the direction we want to take, the truth is, we have more questions than answers.
This is just the first step, and we're figuring it out as we go. What we're doing is undoubtedly ambitious, and the journey ahead won't be easy.
I'm excited, but I'm also nervous as hell.

Dreamy experience at Naar, in Kasauli district - one of the top 5 restaurants in India
Passion project with the restaurant really in the middle of nowhere (it is a long way even from Kasauli town)...14 course sit down dinner with ingredients sourced across the Himalayas, from Kashmir to Bhutan - each dish has an average of about 5 or 6
The cherry on top was the moon rise like no other I have seen - not quite captured by my phone camera
One of the enthusiastic young people (mostly from the metros) working there said that the first time she saw this she thought it was a UFO 😊
This was an extra highlight on the side lines of the Khushwant Singh Literary festival at Kasauli

All the key pillars of the Himalayan culinary culture come to life when I sit to dine for a 16-course meal at the restaurant. Naar features 6 menus, each starring ingredients across 6 seasons with ingredients foraged from their backyard, or sourced from local organisations. It’s been an incredible and eventful 10 days! From receiving the call for the Inaugural dinner at #IndiaAtCannes2023 and making it all happen, was nothing short of wild.
From bringing bags full of ingredients, spices ,pickles and then going through endless hours of prep and logistics dramas, man we pulled it off with style !
