Do government JUST PRINT MONEY against freely issued bonds?

Misguided opinions believe so.

Governments increase the supply of money mainly by a mechanism called Open Market Operations.

In a nutshell, the government issues bonds that are bought on the open market, and later the central bank buys them from the open market to inject more money into the system.

So unless the issued bonds are sold, which means that the open market trusts the value of the bonds, there can't be an increase in money supply.
The money market is the control on the government how much they can print money. Very efficient and secure.

Now, guess which system of printing as much as they want with NO control mechanism involving the markets so far? Cryptocurrency!

In money mechanics, which also determines inflation, deflation, disinflation, and stagflation, the supply of money is not the most important determining factor of the purchasing power (value) of a currency.
The most important determining factor is how much of that money supply is chasing how much goods and services.

Let’s for example say that there’s a luxury watch available for sale. The three billionaires who can afford it are not “chasing” after it, then its value will drop, although there’s billions available to buy it. Their money’s purchasing power relative to the watch has increased.

Huge money supply but its not chasing goods and services. The opposite would lead to their money’s purchasing power to decrease.

Although there is a 450% increase in M1 money supply, it is not chasing anything, so the dollar didn’t crash in value.

According to most cryptocurrencies Tokenomics, an increase in the supply of the currency will erode it's value, and a decrease in supply will increase the value.

The M1 money supply has increased from the end of 2019 to almost the end of 2023 by a factor of 450%, yet the dollar hasn't crashed in value.
