Here’s an idea for your “stay at home “ celebrations.
An Irish flag made with Irish potato farls (slims in England) with 3 delicious simple toppings.
Spiced avocado and soya beans, flaked cod with mayonnaise & smoked salmon with capers & cream cheese
Soda farls make wonderful bruschettas. Their flavour and chewiness make them ideal for this lovely light lunch or supper. To make it extra special add 2 teaspoons of truffle oil to the olive oil before using.

This is perfect for serving as a late brunch at the weekend.
The red pepper and tomato sauce has fantastic smoky back tones thanks to the chargrill and can be made well in advance and kept covered in the fridge until needed.
