@meathead I defrosted what I thought was a whole brisket, it turns out it is four small 2nd cuts all in one bag. I have a whole brisket in the freezer, not sure it will be defrosted by 5am when I need to start my smoke. Should I smoke the 2nd cuts just make them into corn beef?
