@peptest_reflux I chose to talk about pepsin this week because it is a major digestive enzyme produced by the stomach and functions in the breakdown of ingested proteins. It is expressed as a zymogen called pepsinogen and cleaves itself in the presence of HCl. #Hunterbiochemistry
