With the Roth conversion you go 401k ➡ Rollover IRA ➡ Roth IRA
You dont have to continue to the Roth IRA if you choose to stay tax deferred in a Rollover IRA.

Roth conversions are a great way to pay taxes now and then grow the account in a Roth IRA without having to pay taxes on future withdraws. Tim you think I would go to this extent to drive this point if it weren't true?

Call your broker and say you want to setup a Rollover IRA. They'll setup the account and then give them the account info of your 401k and schedule the transfer. After the transfer into the Rollover you are free to trade anything you want, options, margin, crypto etc. Now they will typically liquidate the positons in your 401k to cash on the transfer to the Rollover.
Correct you can withdraw WITHOUT penalty or paying taxes. No where does the IRS say you cannot withdraw your 401k.
Again, you can withdraw your full 401k at anytime paying taxes and/or penalties. Roth conversions are not subject to penalties if the funds are held in the IRA for atleast 5 years but you will have to pay the taxes at time of the rollover.
