John Dory with beer, bacon and cabbage features on tonight’s episode of Food Stories. I’m very fond of this simple treatment for a great fish like John Dory, which is perfectly complemented by the bitterness of the beer, the smokiness of the bacon and the lightly cooked lettuce.

Loved my visit to Houria cafe during my Food Stories travels in Bristol. Founder Kim’s salt cod fish cakes, which I cooked back in Padstow, are seriously good with aioli and a squeeze of lime. Watch at 6.30pm tonight
