Scotland still calls it Black Saturday. It was the last full pitched battle the two kingdoms ever fought, and almost nobody outside East Lothian can name it.

On 10 September 1547, on the banks of the Esk near Musselburgh, a Scottish army under the Earl of Arran faced an English army under Edward Seymour, Duke of Somerset. The cause was the Rough Wooing, Henry VIII's attempt to force a marriage between his son and the infant Mary, Queen of Scots, continued after his death by Somerset in the name of the boy king Edward VI. Scotland had said no, repeatedly, so the answer was invasion.

Pinkie Cleugh has a strong claim to being the first modern battle fought in Britain. Somerset arrived with a fleet in support, and English warships lying offshore could put fire directly onto the Scottish flank. He had cavalry, field artillery and arquebusiers working together in a way that had barely been seen on this island. The Scots came on in dense pike blocks, the formation that had won battles across Europe a generation earlier, and found that the tactical world had moved underneath them.

The Scottish army broke and the losses were enormous, with figures around six thousand commonly cited. But the campaign failed at the level that mattered. Rather than hand Mary over, the Scots shipped her to France, where she was betrothed to the dauphin. Somerset won the battle and lost the entire object of the war in the same stroke.

What butter is, in the public mind:

- Furs up the arteries

- The reason your uncle had his event
- A treat, in a small dish, on a special occasion

What is actually in the packet:

- Vitamins A, D, E and K2
- Butyrate, which your colon lining runs on
- Cholesterol, which your hormones are built from
- A fat stable enough to sit in a dish on the side
- Two ingredients: cream and a churn
- On the human table since the first cow was milked
- Delicious

The stuff that replaced it: refined seed oil, hydrogenated into a solid, deodorised because it had to be, dyed yellow because nobody would buy grey, and sold with the word heart on the tub.

The hydrogenation came off the market four decades later, quietly, once the number of arguments it had lost got embarrassing.

A cow, a bucket and a churn were declared a health hazard, and a factory that had to bleach the smell out of its own product was declared the sensible option.

The butter never did anything. Put it back on the table.
