.@ChefGruel and @meathead. My wife would like to get me a new set of knives for Christmas. But I don’t even know what to tell her to look for. Just a simple home cook, lots of meat moves through the smoker, spatchcocked some birds, etc. any advice would be appreciated.
@ChefGruel Or… an immersion circulator and sous vide that chicken breast to the right temp every time. That being said, the @fireboardlabs spark is awesome.
@ChefGruel If I wanted to adapt a recipe that said to cook a spatchcocked chicken for 40 minutes at 400° to take an hour (I’m going to pick folks up, it’ll take an hour) what do I cook it at so it’s done (but still nice and juicy) when I get home?

@ChefGruel thoughts on chunking up some “Beef inside skirts - American waygu” for this years Halloween crock pot chili? Usually I use “prime beef chunks for stew”, or sometimes prime short ribs. But this is what Costco had for me today. They came as 4 ~15” long strips.
