Sugar is the hardest thing on earth to quit, and none of the difficulty is chemical.
Quit smoking and you go outside less.
Quit drinking and you order a lime and soda.
Quit gambling and you delete an app.
Quit cocaine and you stop phoning a particular person.
Quit sugar and your mother is hurt, your colleagues are uneasy, and the waiter needs a moment.
Every other habit has a supplier you can cut off. This one is supplied by everybody who has ever been kind to you, in every building you enter, on a schedule set by other people's birthdays.
And the social penalty runs the wrong way round. Refuse a cigarette and the room approves. Refuse a slice and the room goes quiet, and then somebody says you're being extreme, and then somebody says a bit won't kill you, and then the host looks upset, and now you are the difficult one at a party you did not want to be difficult at.
Nobody is defending the cake. They are defending themselves from a question they can feel arriving.
If it takes discipline for me to say no, what has it been doing to me every day for forty years while I said yes without thinking about it once?
That is the real reason quitting sugar makes people angry. It is not a diet choice, it is a mirror walking into the room, and mirrors are always described as extreme by whoever is standing in front of one.
