Made a giant bowl of Cranachan Pudding for Sunday lunch afters today. It’s a Scottish dessert but I make it like an American icebox cake. I layer up cream cheese mousse, sour raspberry compote and crunchy HobNob oat cookies and leave it for 8 hours in the fridge. The cookies absorb moisture from the pudding and magically transform into layers of sweet, oaten sponge cake. Excavation is in progress! 🏴󠁧󠁢󠁳󠁣󠁴󠁿
