My plant-based week for #COR424 has come to an end, but there’s no doubt I’ll continue to integrate more plant-based foods into my diet - like this vegan taco “meat” made of cauliflower, mushrooms, and walnuts! This food made me feel great, both physically and ethically. #ElonEd
