You won't be able to access the camera. It's only available to Siri AI and only when you ask it to look and tell you what it sees.
This requires you to audibly ask Siri, which most people don't even talk to Siri on their AirPods in public in general, even without Camera AirPods.

Pro models must have 3 cameras on the back. Only way to do this with glass on the back is to keep the current camera plateau design but swap out aluminum for glass that’s a single milled piece like on the iPhone Air.

The company expects to launch iPhone Pro models next year that will make use of a new glassy look. Glass is used on the front and back of the phones — known internally as V73 and V74 — and the material will curve into the sides of the devices, with a metal band in the middle.
