Also found time to discuss ‘galvanised’ cask hoops vs. plain steel. Galvanising a hoop involves coating the steel with a thin layer of zinc to prevent rust in humid environments. If a hoop rusts, the cask runs risk of loosing its shape which may lead to leaks or more evaporation.
Big fan of Dutch whisky Millstone @Zuidam_Distil Thank you to owner and distiller Dr Patrick van Zuidam for the tour and tasting. We hadn’t realised he focuses on full-term cask maturation (in brand new American oak casks) rather than cask finishing.
We also learnt that the speed of distillation is more important than the shape of the still when it comes to flavour - slow distillation results in more copper contact 👍
