Britain once had a chain of 146 restaurants where you sat at a white tablecloth and a waitress in a cap brought you cow's stomach.
It was called UCP, United Cattle Products, and if you grew up in Lancashire before 1970 you walked past one every Saturday. Manchester, Bolton, Wigan, Blackburn, Preston. The big ones had potted palms, a pianist and a queue down the stairs.
On the menu:
- Tripe and onions, stewed in milk
- Cold tripe with vinegar and pepper
- Cow heel
- Ox tail
- Elder, which was udder, sliced thin
- Steak pudding to follow
That was a cheap night out. Mill girls went on a Friday. Families went after the match. In 1906 Manchester alone had 260 tripe shops, and nobody thought of it as brave.
Tripe is nearly pure protein and collagen, it cost next to nothing, and it came from the part of the animal that was left when the rich had finished.
The restaurants shut one by one through the 1970s. The young had been taught that offal was what you ate when you were poor, and they could now afford a frozen burger.
What that generation is sold for its knees today is collagen powder, in a tub, at £30 a month.
Their grandmother got hers on a plate in Bolton, with onions, for the price of the bus fare, and had a pianist thrown in.

McDonald’s just entered the AI pricing game... and once you understand how this technology works, you might not be happy.
One customer bought a Big Mac at a McDonald’s in New York City for $7.17.
Then he traveled just two miles up the road to another McDonald’s owned by the same franchisee.
$8.05.
That’s roughly 11% more for the same burger.
The AI-powered pricing technology analyzes massive amounts of restaurant data to recommend what it calls the “optimal price” for individual menu items at individual locations.... including estimates of customer willingness to pay.
The technology isn't just asking what a Big Mac should cost. It can help determine how much customers are willing to tolerate paying for it.
And Americans are already asking where the hell this ends.
Airlines have normalized dynamic pricing for years. Retailers are rolling out electronic shelf labels. Now increasingly sophisticated pricing technology is moving deeper into fast food.
If companies can use AI to figure out the absolute most you’re willing to pay before you finally walk away, what do you think is going to happen to prices everywhere?
Almost every plant staple on earth has to be detoxified before a human can eat it, and the instructions are older than writing.
An olive off the tree is inedible, so bitter it has to sit in lye or brine for weeks before the first one can be swallowed.
Acorns fed half the ancient world, and every one had to be ground and leached in running water for days to pull the tannins out.
Cassava is laced with cyanide and has to be grated, soaked, fermented and dried, and the village that skips a step in a hunger year gets paralysed children.

A bitter almond carries enough cyanide that America bans the sale of them raw.
Every one of those is a plant that said no, and a culture that spent generations working out how to overrule it.
Raw beef is a dish. Raw olives are a punishment.

Yeah, let’s go after households who have wood burners and turn a blind eye to the massive AI data centres that guzzle up loads of energy and water while destroying surrounding natural habitats. FFS. They are treating us like suckers.

Then she sticks the exact same meter under her tap:

Watching rainwater barely move the meter while her tap sends the number soaring has people online losing it:
