We boiled 2 pots of water at the same time. In one, we used a tablespoon of salt per quart of water on the recommendation of Salt, Fat, Acid, Heat. We cooked Barilla spaghetti in both pots until al dente. After draining both, we salted the un-salted pasta until the saltiness level was similar to the pre-salted one. In a randomized blind taste test (no sauce), salting before vs after didn’t make a difference. In a separate randomized blind texture test (feeling with hand) neither of us could correctly tell which was which.
