This makes about 1 gallon (4–5 bottles). Total time: 2–4 months minimum, but 6–12 months aging is best.
Important Safety & Foraging Notes🙏
• Harvest only from clean, pesticide-free areas (untreated backyard ideal). Avoid roadsides or sprayed lawns.
• Use just the yellow petals remove all green parts (they make it bitter). Need ~3–4 quarts whole flowers for 1 quart petals.
• Sanitize all equipment properly. Drink responsibly.
Ingredients (1-Gallon Batch):
• 1 quart loosely packed yellow dandelion petals
• 1 gallon filtered/spring water (non-chlorinated)
• 3 lbs sugar (5–6 cups)
• Juice + zest of 3 oranges + 1 lemon
• 1 tsp yeast nutrient (or handful of raisins)
• 1 packet wine yeast (Côte des Blancs, D47, or EC-1118 — not bread yeast)
Equipment Needed:
Large pot, glass carboys (wide + narrow neck) with airlocks, cheesecloth, siphon, bottles & corks.
Step-by-Step:
1. Harvest & Prep: Pluck yellow petals only.
2. Sugar Base: Boil 3 quarts water + all sugar. Cool to lukewarm.
3. Combine: In sanitized fermenter, add petals, citrus zest/juice, nutrient. Pour in sugar water. Top to 1 gallon. Stir.
4. Primary Ferment: Pitch rehydrated yeast. Airlock. Ferment 10–14 days at 65–75°F, stirring daily.
5. Rack to Secondary: Remove petals, siphon off sediment. Ferment/settle 6–8+ weeks until clear.
6. Bottle & Age: Siphon into bottles. Age at least 2 months (6–12 ideal). Improves for years! 😎
Tips:
• Too dry? Backsweeten after stabilizing.
• Around 12–14% ABV
• Add ginger or cloves in future batches for fun twists.
