There is genetic diversity within a species, it's possible for members of a species with a beneficial new gene to mate with members of that same species without that gene and have fertile offsprings.

@SirSicCrusader Although on that very specific claim, there have been experiments demonstrating de novo multicellularity in response to predation in algae at least. So Yes, we've "witnessed" it.
