French Onion Beef Short Rib Soup 🥣
A comforting soup with caramelized onions, tender beef short ribs, and gooey cheese on top!
Ingredients:
- 2 cups beef short ribs
- 6 cups beef broth
- 1 cup shredded Swiss or Gruyère cheese
- 4 large onions, thinly sliced
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 4 slices French bread
- 1 tsp fresh thyme (or 1/2 tsp dried thyme)
- 1 bay leaf
- Salt and pepper to taste
Directions:
1. Heat olive oil in a large pot over medium heat.
2. Season beef short ribs with salt and pepper, then sear in the pot until browned on all sides. Set aside.
3. Add sliced onions to the pot and caramelize them until golden brown, about 15-20 minutes.
4. Stir in minced garlic and cook for another 1-2 minutes.
5. Return the beef short ribs to the pot, pour in beef broth, add balsamic vinegar, thyme, bay leaf, salt, and pepper.
6. Bring the soup to a boil, then reduce heat to low, cover, and simmer for 1.5 to 2 hours until meat is tender.
7. Preheat oven broiler. Toast French bread slices lightly.
8. Remove ribs from the pot, shred the meat, discard bones, and return meat to the soup.
9. Ladle soup into oven-safe bowls, place a slice of toasted French bread on top, and sprinkle with shredded cheese.
10. Broil bowls in the oven for 2-3 minutes until cheese is bubbly and golden.
Tips:
- Enhance the flavor by adding sautéed mushrooms.
- For a lighter option, use chicken broth instead of beef broth.
