In 1998 hogs hit eight cents a pound and Greg Gunthorp called every buyer imaginable. Nothing. By his own telling, two people on earth didn't think he was crazy: his wife and his sister.
So when a Chicago chef said bring me a pig next week, Greg didn't mention he had no processing plant. He found a local locker to kill and chill one, loaded it into a stock tank full of ice in the back of his wife's Suzuki Swift, and white-knuckled it down the Dan Ryan to a restaurant he'd never heard of.
The restaurant was Charlie Trotter's. That same month, Wine Spectator rated it the best restaurant in the world. Greg's words: we literally started at the top.
Almost thirty years later, Gunthorp Farms has its own USDA slaughter plant on the farm, because when the plants he needed kept disappearing, he built one. Rick Bayless is his largest customer. His son runs the plant, his daughter runs sales, four generations deep. And when he's not farming, he's in Washington fighting for the family farms that come next.
Here's the part worth being honest about. Greg raises pigs on pasture. Dad and I finish them in barns. We don't see eye to eye on everything, and we didn't pretend to in the barn. But on the big stuff we're in complete agreement: farmers need more markets, not fewer. The packers need real accountability. And the next generation deserves a real shot at building something, because right now the road in is nearly closed.
I have mad respect for a man who spent his whole life creating value for people beyond himself. That's a meaningful life, and it deserves to be recognized.
VERY annoying that we realize children need a summer break and several vacations a year because they attend school, but we think it makes sense for adults to work 40 hours a week all year and probably get 2–3 weeks off in a whole year if you’re lucky.

There's a kind of farmer who never gets rich and never goes broke.
He runs careful, keeps the same truck twenty years, doesn't take debt that scares him, passes the operation to a kid who wants it.
Nobody writes about him. He's the reason American agriculture still exists.

I turned 18 in 2011. Rent was $425. After work I’d go to the mall with friends and get a whole new outfit for $40. We’d go out that night, drinks were $3 and whole meals were like $7. Wake up next morning & get brunch WITH DRINKS for less than $15. Life is hell now.
The local grocery chain here in RI/MA had a local artist paint its Fourth of July flyer, and I think in a world of AI slop, stuff like this is awesome.
i actually think "surface level" friendships are very healthy. not everyone in your life has to be your ride or die. some friends are for the gym. some are for going out. some are just for complaining about work or bureaucracy. when you stop expecting everyone to be your everything, the disappointment disappears. those deep convos and connections are for the 2-3 people closest to you
