This Italian pasta salad brings them together with tender pasta shells, fresh mozzarella, prosciutto, crisp bacon, basil, Italian dressing, and a little red pepper flakes. The shells are especially good here because they catch small pieces of bacon, tomato, mozzarella, and dressing inside their curves.

I’ve been putting microgreens on just about everything lately. 🌱 These are arugula microgreens, piled high over egg salad on toasted honey wheat bread. And that bread? Oh my gosh. SO good. 🍞
If you’ve never tried arugula microgreens, they have that familiar peppery bite of full-grown arugula, only in these tiny tender leaves. I love them with eggs because they cut through the richness of egg salad and add a fresh little crunch. They’re also wonderful on sandwiches, avocado toast, salads, burgers, or tucked into a grilled cheese.
The honey wheat came from a local bakery we found. Finding a good loaf of locally baked bread is exactly the sort of thing that makes an ordinary lunch worth looking forward to. Toast it, pile on homemade egg salad, add a ridiculous amount of microgreens, and lunch is done. 🥚🌱
And yes, I put enough microgreens on there to qualify as a small garden. 😂
