Guide to marinating delicious grilled meat at home
Ingredients
500g pork shoulder
500g pork belly
1 purple onion
1 garlic bulb
1 ginger root
3 spring onions
1 tablespoon honey
1 tablespoon cornstarch
Marinating spices: Salt, sugar, broth powder, fish sauce, black pepper, cooking oil, sesame oil, chili sauce, brown sugar, sesame oil, etc.

Preparation
-Peel garlic, purple onion, clean and mince them.
-Peel and finely mince the ginger.
-Rub salt on the surface of pork shoulder and pork belly, wash them several times, drain, and cut the meat.
-For skewering, cut the pork into square pieces, about 2 fingers wide and 0.5cm thick.
-For oven or grilling rack, cut the pork into pieces about 2-3 fingers wide and 5-10cm long.
-Tenderize the pork by lightly pounding it with a meat tenderizer to absorb the spices better and result in a tender and flavorful dish.
-Marinating Traditional-style marinating
-Put the prepared meat in a large bowl.
-Add marinating spices: 1 tablespoon broth powder, 1 tablespoon fish sauce, 1 tablespoon sugar, 1 tablespoon honey, 1 tablespoon sesame oil, 1 tablespoon minced garlic, ½ tablespoon ground pepper.
-Mix well and let it sit for 3 hours for the meat to absorb the flavors. It's recommended to use food-grade gloves and massage the meat directly to ensure an even coating of spices.
BBQ-style marinating
Additional ingredients needed: Bell peppers, carrots, onions.
Clean and cut bell peppers, carrots, and onions into bite-sized pieces.
Mix 1 tablespoon cornstarch with 50ml of water.
Marinating sauce: Mix 3 tablespoons brown sugar with 50ml water, dissolve, then pour into a small pot.
Add 2 tablespoons soy sauce, ½ tablespoon chili sauce, ½ teaspoon ground pepper, 1 tablespoon minced ginger, 1 tablespoon sesame oil, 1 tablespoon minced garlic to the sugar pot, mix well.
Heat the mixture until it boils, then simmer. Add the cornstarch mixture, continue cooking until the mixture thickens. Let the marinating sauce cool, then pour it over the prepared pork. Mix well and marinate for 3-4 hours.
Sa Tế-style marinating
Additional ingredient needed: 2 tablespoons Sa Tế (Vietnamese spicy garlic sauce).
Remove the roots of the spring onion, clean, and cut into small sections.
Mix 1 tablespoon fish sauce, 2 tablespoons Sa Tế, minced garlic, and spring onion sections in a bowl. Mix well.
Add the spice mixture to the bowl of prepared pork, mix well, wrap it tightly with food wrap, and refrigerate for 3 hours.
Galangal-style marinating
Additional ingredients needed: 1 tablespoon turmeric powder, 1 tablespoon shrimp paste, 1 tablespoon galangal, ground galangal.
Grind galangal with the spices, including 1 tablespoon turmeric powder, 1 tablespoon shrimp paste, 1 tablespoon minced galangal, 1 tablespoon sugar, a little cooking oil, and minced garlic into a bowl. Mix well.
Add the spice mixture to the bowl of prepared pork, mix well, and marinate for at least 3 hours.
Chao-style marinating
Additional ingredients needed: 3 pieces of white fermented bean curd.
Mix 3 pieces of white fermented bean curd with 1 tablespoon sugar, ½ tablespoon monosodium glutamate (MSG), a little cooking oil, and 2 tablespoons minced garlic. Mix well.
Add the spice mixture to the bowl of prepared pork, mix well, and let it sit for 3-4 hours.
Lemongrass-style marinatingAdditional ingredients needed: 1 horn chili, minced lemongrass, ½ tablespoon chili powder.
Mix the spices, including 1 sliced chili, 2 tablespoons minced purple onion, 2 minced lemongrass stalks, ½ tablespoon chili powder, 1 tablespoon salt, 1 tablespoon fish sauce, ½ tablespoon ground pepper, 1 tablespoon sugar, 1 tablespoon MSG, 1 tablespoon cooking oil, to a bowl. Mix well.
Add the spice mixture to the bowl of prepared pork, mix well, and marinate for 3-4 hours.
Honey-style marinating
Additional ingredient needed: 1 tablespoon honey.
Mix the spices, including 1 tablespoon honey, 1 tablespoon soy sauce, 1 tablespoon fish sauce, 1 tablespoon minced garlic, minced spring onions, a pinch of salt, ground pepper, 1 tablespoon MSG, in a bowl. Mix well.
Add the spice mixture to the bowl of prepared pork, mix well to ensure even marination. Marinate for 3-4 hours.
Before grilling, add a little cooking oil and honey on the surface of the meat.
Grilling
Once marinated, grill the meat in the oven until cooked.
Alternatively, skewer the meat on skewers or place them on the grilling rack and grill on a charcoal stove.When grilling pork belly on charcoal, turn the meat occasionally and brush with additional spices to ensure even cooking without drying out.
Finished Product and Enjoyment
Once the meat is tender and beautifully golden, transfer it to a plate.
Serve with lettuce and tomatoes on the side.
