@davidgross_man I was late to it and can’t overstate that it is both not too late and completely worth it. Club/pro level has the intensity of playoff baseball basically every game for 8/9 months straight. Also, it’s really nice to have a little morning sport to watch on the weekends

Also, 2-4 day fermentation is ideal, but don’t let it prevent you from making it. I usually make enough for 2 pizza nights… 1 the day I make the dough, and 1 for a few days later
