@SejalSukhadwala Miso is probably the best bet, although a heavily salted mushroom duxelles might work, especially with seaweed. Furu/fermented bean curd could also be a good choice, but it may be too cheesy/funky.
@LovejoyActual I find that having more of the weight near the heel makes certain motions, like mincing, easier to do repetitively, it feels more ergonomic to me. Distal taper also means it's easier to do precise cuts with the tip, like when you're butchering a chicken.

@jaketropolis They're pretty good for their price, but I wouldn't get the non-iron, the shirt isn't very breathable with the coating. Second hand is a nice alternative since they're still fairly pricey, even with the bulk discount.
