I’m back home on the Delta and I’m doing steaks. These are Costco Filets. I can tell if the grill is hot enough if I can barely hold my hand close above it for 3 seconds. I don’t use a timer or a thermometer. I know what medium rare feels like just by poking the steak. And look at that. carves like butter and tastes great with just salt, pepper, garlic juice, and a little Shaka’s MMM Sauce in the marinade.
