I'm thinking specials for my menu and I'm thinking a bangin' bowl of bolognese every once in a while. This is more a British spag'bol, as the traditional Emilia-Romagna style is made with tagliatelle (and some other special ingredients) #pasta #inverness

[Tagliotello @tagliotello]

How would you feel about fresh pasta and sauce delivered to you? Or a deli where you can come and watch your pasta being handmade before landing on your plate or ready for takeaway? Currently BURSTING with ideas! #inverness #pasta

[Tagliotello @tagliotello]

I was gifted chanterelle mushrooms from the local woods so I'm testing an Italian style preserved mushrooms for antipasto for dressing anything from pastas, pizzas and salads. They have a hard day of drying ahead before jarring them up! Excited for this! #italian #inverness

Brandelli pasta means literally 'tatters'. Food for the heart and soul! Tagliotellos food is made for days you need a pick-me-up, fancy something fresh, or just need a little bit of comfort food. Fresh pasta is also healthier, lower in both carbs and calories! #food #inverness

[Tagliotello @tagliotello]

Believe it or not this is ricotta cheese! (homemade at that), mixed with a couple lovely things and deep fried to become extra fluffy and a lil' crispy. A dessert potential? A special? I guess you'll have to wait and see... #dessert #inverness

Al fresco? Al fresco. Enjoying what few days we may have left to eat outside. Fresh tagliatelle, oyster mushrooms, smoked garlic and a chilli kick and an extra bonus of a caprese with homegrown tomatoes! #pasta #inverness

[Tagliotello @tagliotello]

Calzone! I had a little fun with some leftover dough, scamorza cheese and herbed passata! One of my goals for when I work my way up to a deli is a decent woodfire oven. How does the sound of woodfired pizza, calzone, focaccia and lasagne sound? #inverness #eatlocal

[Tagliotello @tagliotello]

Lasagne will absolutely be appearing on the menu at some point. This is a version I did focusing on a 50/50 spread of pasta and sauce, but it has come to my attention that my followers so far are a bunch of saucy fiends... #foodie #inverness

[Tagliotello @tagliotello]

With every portion that goes out there will be two slices of homemade Ligurian focaccia to mop up what sauce 'might' be left on the plate. This is known as a scarpetta, the 'little shoe' that is meant for cleaning up your bowl at the end of a meal! #inverness #foodie

These little raviolis arrived today! Thank you so much to Fraser Robertson who is @_lostastronaut and designed my logo, he's an incredible artist and friend and you should follow him and give him some love.

Little pillows of gnocchi goodness. Whether they're baked, fried, or tossed in sauce, they're an ultimate comfort food to be shovelled into your mouth with a spoon. I'll be showing you a different type of gnocchi soon that may or may not be on the menu... #pasta #inverness

[Tagliotello @tagliotello]

Some fresh egg tagliatelle! I'll be working on a dairy and gluten free version of this to cater for all diets and allergens, then I'll have some old rustic Italian recipes that I'm bringing a Scottish twist to that you'll see on the eventual Tagliotello menu! #pasta #inverness

[Tagliotello @tagliotello]

Sometimes less is more, especially when the ingredients are top notch! Gnocchi pan fried with brown butter and sage sauce. A variation of this will be appearing on the menu, which hopefully isn't too far in the future... #foodie #pasta

[Tagliotello @tagliotello]

A test piece from a little while ago that I inhaled. Cavatelli cacio e pepe. Definitely a contender for a specials item... Handrolling the cavatelli is so therapeutic. #pasta #Foodie

First pasta test of the day! Fresh fettuccine, Scottish smoked salmon, dill, lemon zest, capers, Extra Virgin Olive Oil and some of that beautiful starchy water tossed to make it extra creamy without the need of any… https://t.co/PVe75xlf6E

For the last six months I've been testing recipes on an almost daily basis to make sure that when I release my menu it's at its best! And I've got more than just pasta on the way too.. Follow to see what I've got in mind! #foodie #foodporn
