This brisket took 24 hrs. to cook. It went through a "stall" period for approx. 8 hrs. It reached 160º internal temp. Off the smoker, wrapped in foil, back on the smoker until the internal temp reached 204º. The brisket weighed 16 lbs.

It was FANTASTIC! Well worth the wait.

Try Lamb Chops! A simple way to cook Lamb Chops is to mix Pesto, salt, pepper and a heaping spoon of garlic in a bowl, mix well. Rub the mixture all over the lamb chops. Cook @ 350º until the internal temp is 150º. Let rest for 10 min. Slice and eat.
