I know this stew might look like the regular tomato stew but trust me it is different, the difference is mainly in the technique, the heavy seasoning, how the meat is fried and the cooking duration of the stew itself.
BRINE FRIED TILAPIA
I prefer fried tilapia over grilled tilapia
But sometimes it’s just too dry and crispy for my liking so I decided to start soaking my tilapia is a seasoned salt solution(brine) before marinating it.
It makes it juicy & succulent with a light crispy texture
